Ingredients

• 6 cl Pink Blossom
• 2 cl lime juice
• 2 cl vanilla syrup
• 2 cl egg white
• Soda water
• Ice

Method

Crack the egg and separate the egg white over the shaker. This way, you avoid having to throw everything away if a little egg yolk accidentally ends up in your shaker.

Then add the rest of the ingredients and fill with ice.

Shake well. Strain into the empty half of the shaker and shake hard again to create a nice foam. This method is called the reverse shake.

Then pour it into a chilled highball glass.​

Place your bar spoon with the narrow end through the foam in the centre of the glass and gently add the soda along the stem. This will cause the foam to rise above the rim of the glass. So do not add too much at once, and adjust as you go.

Cocktail version:​ add 5cl Gin
